All American Skinny Chili
Makes 6 servings
2 tsp olive oil
2 tsp minced garlic
1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced
1/4 cup white onion, diced
1 lb. extra lean ground beef *
1-14 oz. can petite diced tomatoes, undrained
1-14 oz. can diced tomatoes and green chiles, undrained
1-14 oz. can of Great Northern beans, drained
2 tbsp tomato paste
2 tbsp chili powder
2 tsp cumin
1/4 tsp salt (optional)
Add olive oil to large stockpot over medium high heat. Add garlic, peppers and onion. Stir frequently until softened, approx. 2-3 minutes. Add ground beef to the stockpot and cook until browned. Add the last 8 ingredients to the pot, stir and cover. Simmer for 20 minutes.
* Vegetarian option: omit ground beef and substitute 1-14 oz can black beans, drained
